BBQ Chicken

Marinate your chicken breast in 
1 table spoon of honey 
3 table spoons of tomato ketchup 
2 table spoons of soy sauce 
Salt 
Pepper
2 crushed garlic cloves 

Leave for half an hour, longer if you can wait, roast in the oven for 30-40 minutes.

Baked Figs

Simple and delicious. Cut the figs in four, sprinkle with cinnamon and a drizzle of honey. Then bake the figs for 15 minutes and serve with yogurt.

Chicken with Kale, Rice and Beans

Season the chicken and roast for half an hour. 
The black beans need to be soaked over night, boil for 10 minutes and then let simmer for half an hour. 
For the kale, sautée an onion, garlic and chili. Steam the kale for 10 minutes then toss in with the onions. 
Cook the rice with a little oil then add in the black beans. 

Ingredients: 
One chicken breast 
Half cup of rice 
Half a cup of black beans 
An onion
3 gloves garlic
Chili
Kale

Thai Chicken Curry

Stir fry a chicken breast, peppers, courgettes, chili, ginger and garlic for 10 minutes then add a small tin of coconut milk and cook through for a few minutes. Season and serve with rice.

Creamy Chicken and Veg

Made healthy 

Stir fry a chicken breast with mushrooms, half a pepper and half a courgette with garlic and herbs. 
Once cooked spoon in 3 table spoons of Greek yogurt, a squeeze of lemon and chilli powder. Cook through for a few minutes and if hungry serve with rice.

Avocado and Mango Smoothie

Green smoothies look alien but taste amazing as well as being really good for you. 

Blend 1/2 an avocado 
1/2 a mango 
A handful of spinach 
1/4 of a cucumber 
A sprinkle of chia seeds 
A splash of Apple juice 



This green smoothie is made sweet with the mango and the avocado gives it a nutty taste and creamy texture. 

Chili Con Veggie

One of my best friends is a veggie so although I'm a massive meat eater I've eaten my fair share of veggie meals over the years. 

For the chili con veggie
Dice one pepper, one courgette, an onion and mushrooms and fry in a little chili oil with garlic and herbs and extra chili if you like it hot. Once sweated add in some Quorn mince and continue to cook for a few minutes. 
Add a tin of tomatoes and a squirt of tomato purée, I also add a splash of soy sauce for flavour. 
Add in a tin of kidney beans or mixed beans and let simmer for 20-30 minutes. 

Serve with salad and or brown rice and a dollop of yogurt to garnish. 


If you aren't a fan of Quorn just add in extra veggies and beans.

Get Greek


Minted Lamb Kebabs with homemade tzatziki 


For the kebabs mix together minced lamb with spring onions, mint and an egg to bind. Mould over kebab skewers and cook in the oven at 180 degrees for 20 minutes. 

Tzatziki is easier to make than spell, simply mix Greek yogurt with diced cucumber, spring onions and mint leaves. 
Serve with the lamb kebabs over a bed of spinach and a squeeze of lime for a quick and healthy dinner.

Porridge

5 reasons to eat porridge

Baked Grapefruit

This super fruit is packed with vitamin c which helps the immune system to fight off cold and flu and can counteract tiredness. 

Although the benefits are good I know most people aren't a fan, so take in the goodness by baking the baby's with a table spoon of honey and a sprinkling of cinnamon for 15 minutes at 180 degree.
Eat on it's own or with a dollop of yogurt. 
Use as a dessert option if you're being good. 

Eating half a grapefruit before each meal will kick start your metabolism and will really help weight loss thanks to it's fat burning enzymes which absorb starch and sugars from the body.

Satay Chicken Salad

If you like it nutty

In the salad: 
Spinach 
Cucumber 
Spring Onions 
Tomatoes 
Half a Grapefruit 

Might seem weird in a salad, but grapefruit is brilliant at speedy up your metabolism, plus is adds colour and flavour to the salad. 

For the chicken: 
2 tbsp crunchy peanut butter 
2 tbsp soy sauce 
A glove of garlic 
Chili powder 
1 tbsp honey 
Shake up and leave to marinate.
I like to cook the chicken in a little chili oil. 
Throw over the salad and enjoy.

It helps to burn fat and can boost your metabolic rate by 3-11%
It stimulates the nervous system which breaks down fat cells.
Plus it's an antioxidant and contains Vitamin B, as well as levels of Magnesium 
and Potassium which reduced blood pressure.

Salmon and Eggs

Smoked salmon and scrambled eggs
Salmon is packed with omega 3 which gives you brain power!

Served with a black coffee and a 1 banana, half a melon, 1 mango and a handful of strawberries smoothie.

Special Fried Rice

One of my favourite Chinese dishes made 'healthy'.
Stir fry turkey strips with spring onions, broccoli, chili and courgettes. 
Cook half a cup of wild rice and mix in 2 whisked eggs.
Add together and enjoy guilt free. 

This is also protein filled so perfect to whip up after a gym session.

Oven Baked Cod



For a colourful and quick dinner. 
Oven baked cod  in lemon juice, spring onions, tomatoes and chilli's.
Cooked for 15 minutes and served on top of an omelette.
I've added broccoli,wilted spinach and chilli sauce to the omelette to add a kick.

Chocolate Covered Strawberries

It's good to be bad.

Melt 2 bars of your favourite chocolate in a glass bowl over boiling water, I also added a table spoon of golden syrup to make it extra sweet.
Dip in the strawberries and add a topping of choice.
Cool in the fridge for as long as you can wait.

It's still classed as one of your five a day?

Butternut Squash Soup



Butternut Squash
Half a sweet potato
2 onions 
Chilli and garlic
A can of coconut milk

Roast the butternut squash and sweet potato until soft.
Sweat the onions, chilli and garlic.
Add the butternut squash to 500ml of vegatable stock and boil for a few minutes, add in the coconut milk and season.
Blend it all and eat!

Serve with a spoonful of creme fraiche or sprinkle with some pine nuts for an added crunch.

Summer Berry Omelette

A sweet treat for breakfast



Whisk 2 or 3 eggs with a splash of milk
