Baked Grapefruit

This super fruit is packed with vitamin c which helps the immune system to fight off cold and flu and can counteract tiredness. 

Although the benefits are good I know most people aren't a fan, so take in the goodness by baking the baby's with a table spoon of honey and a sprinkling of cinnamon for 15 minutes at 180 degree.
Eat on it's own or with a dollop of yogurt. 
Use as a dessert option if you're being good. 

Eating half a grapefruit before each meal will kick start your metabolism and will really help weight loss thanks to it's fat burning enzymes which absorb starch and sugars from the body.

Satay Chicken Salad

If you like it nutty

In the salad: 
Spinach 
Cucumber 
Spring Onions 
Tomatoes 
Half a Grapefruit 

Might seem weird in a salad, but grapefruit is brilliant at speedy up your metabolism, plus is adds colour and flavour to the salad. 

For the chicken: 
2 tbsp crunchy peanut butter 
2 tbsp soy sauce 
A glove of garlic 
Chili powder 
1 tbsp honey 
Shake up and leave to marinate.
I like to cook the chicken in a little chili oil. 
Throw over the salad and enjoy.

Coffee is one of my favourite things in the world.
And there are reasons to love it to.
It helps to burn fat and can boost your metabolic rate by 3-11%
It stimulates the nervous system which breaks down fat cells.
Plus it's an antioxidant and contains Vitamin B, as well as levels of Magnesium 
and Potassium which reduced blood pressure. 

Time to kick Monday's ass

Salmon and Eggs

Sunday is a treat day.

This might not be to everyone's taste but not only is it delicious, it's good for you too.
Smoked salmon and scrambled eggs
Salmon is packed with omega 3 which gives you brain power!

Served with a black coffee and a 1 banana, half a melon, 1 mango and a handful of strawberries smoothie.

Special Fried Rice

One of my favourite Chinese dishes made 'healthy'.
Stir fry turkey strips with spring onions, broccoli, chili and courgettes. 
Cook half a cup of wild rice and mix in 2 whisked eggs.
Add together and enjoy guilt free. 

This is also protein filled so perfect to whip up after a gym session.

Oven Baked Cod



For a colourful and quick dinner. 
Oven baked cod  in lemon juice, spring onions, tomatoes and chilli's.
Cooked for 15 minutes and served on top of an omelette.
I've added broccoli,wilted spinach and chilli sauce to the omelette to add a kick.

Bacon bagels with sour cream and chive dip.
A bowl of melon 
Washed down with a banana smoothie.
2 Bananas, 1 cup milk and a few drops of vanilla extract and plenty of ice.

Chocolate Covered Strawberries

It's good to be bad.

Melt 2 bars of your favourite chocolate in a glass bowl over boiling water, I also added a table spoon of golden syrup to make it extra sweet.
Dip in the strawberries and add a topping of choice.
Cool in the fridge for as long as you can wait.

It's still classed as one of your five a day?

Butternut Squash Soup



Butternut Squash
Half a sweet potato
2 onions 
Chilli and garlic
A can of coconut milk

Roast the butternut squash and sweet potato until soft.
Sweat the onions, chilli and garlic.
Add the butternut squash to 500ml of vegatable stock and boil for a few minutes, add in the coconut milk and season.
Blend it all and eat!

Serve with a spoonful of creme fraiche or sprinkle with some pine nuts for an added crunch.

A handful of spinach
Half a cucumber
1 Banana 
Ginger
A kiwi

Top with ice and a splash of apple juice and blend to your hearts content.

Summer Berry Omelette

A sweet treat for breakfast



Whisk 2 or 3 eggs with a splash of milk
Add cinnamon to taste 
Pop in a pan with a handful of berries 

Serve with yogurt
